Novigrad: the birthplace of Vergal extra virgin olive oil
Like so many other towns in Istria, Novigrad maintains a tradition of olive growing and producing reputable extra virgin olive oils. Relying on this tradition, Aminess began producing its very own Vergal olive oil using olives from its own olive groves near its hotels and campsites in Mareda and Karpinjan. The first awards came soon thereafter, and today, champion Vergal olive oil is a ubiquitous condiment in all of our restaurants. The best oils bear the title of “extra virgin olive oil,” and connoisseurs recognise them by their specific characteristics, spiciness, bitterness, and fruitiness, which must be perfectly balanced. Extra virgin olive oils cannot contain more than 0.8% free fatty acids.
